Lots of exciting stuff was happening in France in the mid 1960’s and while the country would probably like to be most well remembered for the politics of grandeur –Charles de Gaulle’s reformation of the French economy, creation of an independent foreign policy and strong stance on the international stage — the truth is that something more important was happening. A baker in Northern France was tired of throwing away parchment paper and scraping dough balls off of baking sheets. Dunno how he made the leap but he went on to invent SILPAT – a little miracle for bakers. SILPAT is a non-stick, freezable, heatable (up to 480ºF) baking sheet liner. It will prolong the life of your baking sheets. It will prolong the life your marriage (it takes a tremendous amount of stress away because your dough nearly always works on SILPAT).

These things are really great. The ONLY downside I find is cleaning them is sort of a pain. My latest (and most successful so far)  is to dunk them into a sink of sudsy water, wiping them down with a sponge while holding them underwater and then rinsing under cool water. Then let them dry overnight hanging on the handle of your oven. That’ll do it.
